Red Lentil Soup with Ginger

After visiting a newly opened Indian store I was inspired by rows and rows of lentils they have for sale and endless spices where many of them were new to me. It was incredible to learn and see in one place how many varieties of lentils exist. The quick lentil soup I usually make is not vegetarian (it contains a bouillon cube and bacon that makes it similar to pea soup ).

Goat Soup with Dumplings

I didn't know what the goat meat tastes like until I made a refreshing Saturday morning trip to Blood Farm in West Groton, MA, and cooked the goat meat soup for the first time in my life. I was hoping to get fresh meat, but it was frozen, I should have asked to keep it fresh for me in advance. Who knew?

In today's recipe tiny Frikadellen are prepared in a different way. I would say this soup is a healthier way of cooking ground meat, since it is boiled not fried. The soup is simple, the only special skill you need is roll small meatballs out of ground meat.

I tried to grow many things, from greens to strawberries, and once even cantaloupe (that was relentlessly eaten by some beasts before we had a chance to enjoy it ourselves).

Boiled Corned Beef & Veggies

Not that I have Irish ancestors to celebrate Saint Patrick's Day , but I really like this corned beef & veggies soup. It is simple and rustic, but very aromatic and filling. It does take a lot of time to boil meat, but if you cook in two stages, it's really not that bad.

Grocery stores here bear a mark of Japanese influence: dried shiitake mushrooms, wakame seaweed and mung beans are an easy find. Mung beans are tiny dull green beans, almost as small as lentils. Japanese use them to make desserts, but to my mind a bean is a bean and belongs just as well in a soup.

Well, if you need just pieces of flesh for a main course - yes, but not when you intend to make a fish soup. Ukha (Russian fish soup) is made out of a whole fish, it only needs to be scaled, and the insides must be cleaned out.

Salt to taste Pepper to taste (any kind) 1 bay leaf Slices of lemon & black olives to garnish Chopped greens (dill, parsley, green onions) Method: Make a nice beef broth (use this recipe of the beef broth, for example ). Fish out and discard vegetables. Take out meat, remove all bones, cut meat in small pieces, and put back to the broth along with other meats.

The reward was a few baskets of one of the best mushrooms. We dried them for winter use, mostly for soups. You can also make a soup of fresh porcini, but dried mushrooms acquire a unique scent, and these two soups are quite different in taste and flavor.

Traditionally, this soup is made with chicken kidneys, but this requires quite a bit more patience on the part of the cook, and a lot less squeamishness on the part of the eater.

She just loved to cook this red shchi in summer when there were plenty of ripe fresh tomatoes. Actually, at that time in Siberia this soup was possible only in summer because fresh tomatoes were available only then.

A soup with klezki, one of the simplest Russian dishes, must have been handy during the time of empty shelves in the Soviet supermarkets. I barely remember those times, they left in me no bitter sediment, and this soup has left me nothing but warmth. There are other variations on klezki, most notably the German k ößchen, but the klezki I know call for nothing but flour, eggs and the broth to make the soup with.

Some consider chicken soup a winter meal, especially if one has a cold. Luckily, I don't have this association, and, due to the fact that at my favourite farm fresh chickens are cut some time in mid summer, that's when I have the opportunity to prepare my best chicken noodles. Chicken is certainly fresh-not-frozen and organic, and noodles are homemade by yours truly.

This kind of dinner together demanded something unusual and appropriate for spring, nettle soup fell precisely in this category. We searched the nearby forest for sprouts of stinging nettle to no avail. For some reason this very common weed is not widely spread in our vicinity.
